Producing wines without added sulfites – with a scientific and sustainable method – and thus offering a concrete and reproducible alternative to conventional winemaking.
We share our knowledge with other winemakers, welcome people into our world, and tell, bottle by bottle, of another way to experience wine: authentic, healthier, truer.

We don’t take the easiest path. We take our own.
Valentina and Cesare decided to leave the city to bring this project to life, far from the pace of industry. They found their ideal place in Maremma, among gentle hills and the scent of the Tyrrhenian Sea, where the land still preserves its wild and authentic soul.
